
Say goodbye to boring recipes and try this Mango Chicken Collard Wrap! Packed with roasted chicken, vibrant veggies and sweet mango, this collard green wrap is both low-carb and gluten-free. It’s the perfect quick and healthy meal that’s easy to prep and big on flavor.

- 2 cups roasted chicken, shredded
- 2 large collard green leaves, large stems removed
- 1 medium mango, diced and divided in two
- 1/2 cup bell pepper, finely diced
- 1/2 cup purple cabbage, shredded
- 1/4 cup red onion, finely diced
- 2 Tbsp unsweetened plain yogurt
- 2 Tbsp sliced almonds
- 1 lime, juiced and zested
- 1 tsp ground cumin
- 1/2 tsp ground ginger

In a food processor or high speed blender, combine 1/2 of the diced mango, yogurt, lime juice and zest, cumin, ginger, and salt and pepper to taste. Puree until smooth.

Transfer to a bowl and add shredded chicken then toss to coat. Add the other half of the mango, bell pepper, onion, and sliced almonds then stir to combine.

Place collard greens dark-side down. Divide chicken mixture between collard leaves. Top with cabbage. Fold ends over filling then roll like a burrito. Slice in half and enjoy.
Notes:
- Use pre-roasted or rotisserie chicken
- Can use frozen and thawed mango
